Pastry chef Andrea Jarosh has taken all the good memories of eating
rainbow cookies while growing up in Queens and packed them into her
latest dessert masterpiece. The rainbow cookie ice cream sandwich at the
Chelsea pizza parlor Donatella combines a multitude of surprising
flavors. The cookies, which more closely resemble thin slices of cake,
are incredibly moist so they stay soft even when frozen. Almond-flavored
with a thin layer of bittersweet ganache that gives the sandwich a
touch of chocolate flavoring, these red, white and green cakes surround a
homemade vanilla gelato topped with just a touch of strawberry rhubarb
jam. Served two to an order for $7, Jarosh’s sweet creation is both the
perfect size and flavor combo for a post-dinner treat.
